Antiguans are superior in their quality control methods, literally hand picking imperfect beans from the running belt. The coffee growing custom of large shade trees originated here and over 100 species of shade trees can be counted on a single plantation. The proper level of shade slows the maturity of the coffee plant, which in turn offers a more rich and complex flavor. Shade grown coffee is one of the most environmentally benign crops in the world. This region is perfect for cultivating coffee, with ample rainfall, altitude above 4600 feet and a constant humidity of 65% it makes absolute sense for coffee to be the number one industry in Guatemala.
